Is there anything better than a hearty comfort food dish when the weather turns cold in the fall? I don't think so and that's exactly what this potato soup is! This creamy, silky, chunky, spicy and hearty soup is sure to be a dish that the whole family loves! Growing up in the mountains of Virginia it was not uncommon for us to reheat a hearty potato soup before heading out to cut wood or enjoy a day hunting game on the mountains. Well, I wanted to try something a little different in honor of Saint Patty's day coming up so here is my take on bangers and mash. I've replaced the traditional mash and gravy with an Irish potato dish called Colcannon, or as my bride called it, the absolute best potatoes she has ever had! Colcannon is a delicious buttery potato/vegetable dish normally served with a tab of butter in the center of the serving. Yeah, I like to mix things up and it's just pure joy to be able to share it with you when it works out! Growing up in rural Virginia the are certain things that one must learn how to masterfully cook. Fried potatoes are one of those things. Having a beautiful daughter that is #glutenfree and has #downsyndrome that loves fried potatoes only made my quest for the perfect fried potatoes that much more important.
