I love Jerk Chicken, especially chicken thighs! The thighs are just so flavourful and moist! A lot of jerk chicken recipes are loaded with allspice, which is a great seasoning, but that's all you taste. This recipe has some sweet, heat, acid and savory that really works incredibly well together! It's a great marinade or sauce!
Well, I wanted to try something a little different in honor of Saint Patty's day coming up so here is my take on bangers and mash. I've replaced the traditional mash and gravy with an Irish potato dish called Colcannon, or as my bride called it, the absolute best potatoes she has ever had! Colcannon is a delicious buttery potato/vegetable dish normally served with a tab of butter in the center of the serving. Yeah, I like to mix things up and it's just pure joy to be able to share it with you when it works out! So this Saint Patty's day enjoy a glass of your favorite "green" beverage along side a delicious plate of bangers and mash!...
Well, here it is, Papa's Pepper Ragin' Rib Rub! Don't let the name fool ya, it's not just for ribs, it's good on anything! You might want to make a batch of this rub and keep it handy in a shaker to put on burgers, chicken and even fries! It's a sweeter Kansas City style rub that is really packed with layers of flavor and some kick from Papa's Pepper premium spice blend!

Y'all, when I think barbecue, I immediately think Kansas City style barbecue. To me, it's the best there is. I love the thick, sweet, smoky, spicy tang that it offers! Well, I got to work making my own and after several attempts, tweeks and twists, I came up with what I think is the best Kansas City style barbecue sauce there is and I've decided to share it with you! I can be used on pork, beef, chicken (as seen here) it it will even be good on a flip-flop! You can thank me later.....
