Papa's Pepper Spicy Pumpkin Mousse


Papa's Pepper Spicy Pumpkin Mousse

It happened.  I got "bitten" by the fall pumpkin bug and I'm so glad I did because that's the reason behind this spicy pumpkin mousse!  I love the cold, sweet, smooth and spicy combination and you will as well!

1 15oz. Can quality pumpkin puree
1t pumpkin pie spice
1/2t Ground allspice
Zest from 1/2 an orange
2t Papa's Pepper premium spice blend
1/2t Salt
3T butter melted
4 Eggs, whites and yolks sperated
3/4t Cream of tartar
1/2C Sugar
2/3C Heavy whipping cream
1t Vanilla extract
3T Sugar

1. Combine pumpkin, pumpkin pie spice, Allspice, orange zest, Papa's Pepper and salt in a large mixing bowl and whisk to incorporate.  While whisking slowly drizzle in melted butter until it's all incorporated.

2. Add egg whites to stand mixer bowl.  Mix on medium speed until eggs are frothy.  Add Cream of tartar and mix on high speed until soft peaks form.  Add sugar and mix on high until stiff peaks form.  Gently fold the meringue into the pumpkin mixture.

3. Add heavy whipping cream to the bowl of a stand mixer.  Mix on high until the cream starts to tighten.  Add vanilla extract and 3T sugar and mix on high until cream get stiff and will hold it's shape when spooned out.  Gently fold whipped cream into pumpkin mixture until it's incorporated.

Refrigerate for a few hours before serving.  Garnish with orange zest, chocolate chips or crushed almonds.
