Papa's Pepper Shrimp Sushi Stack

I love good sushi, I really do. There are virtually endless flavor combinations that explode with flavor in one glorious bite. That being said, rolling sushi is definitely a skill that I definitely do not have! That's what inspired me to create my Papa's Pepper Shrimp Sushi Stack. It's got all the flavor and texture without having to roll a thing!
For the shrimp:
1-2 pounds peeled and deveined shrimp
2T Lemon juice
1T butter
For the Yum-yum sauce:
2C Mayonnaise
3T Sugar
2T Mirin
2T Tomato paste
1&1/2t Granulated garlic
1t Onion powder
1t Salt
2-3T Heavy cream
2T Butter, melted
2t Papa's Pepper premium spice blend
Additional ingredients:
2 Avocados, halved, peeled and cut into thin slices
1 Cucumber, peeled and sliced into thin rounds
1 pound rice of your choice, cooked and cooled
1C Panko bread crumbs
Assembly:
Combined all ingredients for Yum-yum sauce except heavy cream. Add 2-3T heavy cream until sauce is the consistency you want. Combined sauce with cooled rice and set aside. Add butter and lemon juice to sauté pan over medium-high heat and cook shrimp until pink and just cooked through, 4-6 minutes. While the shrimp cooks lay cucumber slices on a plate in a round circle then sprinkle with kosher salt. Lay a ring mold centered over cucumbers and fill with Yum-yum rice. Generously sprinkle Panko bread crumbs on top of rice. Fan out avocado slices on a cutting board and form into a circle and using a large turner or board scraper transfer on top of Yum-yum rice. Fill center of avocado with cooked shrimp. Add fresh ground black pepper and salt to taste. Remove ring mold and serve!
