Papa's Pepper Ragin' Rib Rub

Well, here it is, Papa's Pepper Ragin' Rib Rub!  Don't let the name fool ya, it's not just for ribs, it's good on anything!  You might want to make a batch of this rub and keep it handy in a shaker to put on burgers, chicken and even fries!  It's a sweeter Kansas City style rub that is really packed with layers of flavor and some kick from Papa's Pepper premium spice blend!

1C Brown sugar
2T Kosher salt
1t White pepper
3T Smoked paprika
1T Paprika
2t Mustard powder
2t Onion powder
1T Chili powder
2t Granulated garlic
1t Papa's Pepper premium spice blend
3T Mustard (optional)

Mix all ingredients, except mustard, very well.  Pat ribs dry with a paper towel.  The jury is still out on using mustard, but I like to coat my ribs with a thin layer of mustard to really get a nice layer of rub to create a wonderfully flavourful "bark" on my ribs.  If you choose not to use mustard the rib rub will still adhere to the ribs.

Smoke, grill or roast the ribs for 3-4 hours at 225°.  This low and slow method of cooking the ribs will insure a tender "fall off the bone" rib with layers of exceptional flavor.  If you choose to roast your ribs be sure to put them under a hot broiler for 3-5 minutes at the end of roasting them to get that wonderful caramelization from the sugar in the rib rub!  Enjoy!
