Papa's Pepper Phire Cracker Hummus

Well, it's that time of year when everyone hits the gym hard and eats healthy to get ready for the summer fun!  It's also the time leading up to the Super Bowl, a day when more appetizers are consumed than probably any other day during the year.  Want a healthy appetizer to serve during your Super Bowl party?  Look no farther, here it is!  It's creamy, savory and spicy deliciousness in every bite!

2 Cans chick peas, drained & rinsed
1/2t Baking soda
3 Cloves of garlic
1C Sunflower kernels
2t Cumin
1t Ground coriander
1t Onion powder
2t Kosher salt
2t Papa's Pepper premium spice blend
4T Cold water
1/2C lemon juice
1/4C Olive oil
Scallions for garnish

1. Add chick peas to sauce pan with baking soda, cover with water and bring to a boil over medium high heat.  Once boiling, reduce to simmer for 12 minutes.

2. Lightly toast sunflower kernels in saute' pan until golden brown.

3. Add toasted sunflower kernels to food processor along with water and spices.  Pulse until a paste forms, pushing ingredients down from the sides as needed.

4. Add cooked chick peas, olive oil and lemon juice to food processor and puree until smooth and creamy.  Garnish with paprika and scallions.  Serve with crackers, celery or carrot sticks.

Cooks note:

Using baking soda in the water softens the shells of the chick peas so that there is no need to peel the shells.
