Papa's Pepper Pepperoni Crusted Grilled Cheese

Some things you just don't forget, this is one of those things.  I might even go so far as to say that you will remember when and where you tried this Papa's Pepper Pepperoni Crusted grilled cheese for the first time, it's that good!  The pepperoni forms such a wonderful crispy crust in contrast to that ooey-gooey melty cheese with a combination of  mustard and Papa's Pepper premium spice blend, it's unforgettable!

4 Slices sourdough bread
8oz. Pepperoni, thinly sliced
6 Slices Muenster cheese
6 Slices Smoked Gouda
4T Mayonnaise
4T Dijon Mustard
1t Papa's Pepper premium spice blend

Mix Papa's Pepper premium spice blend and mustard together.

Spread the mayo over one side of the bread. Layer the Pepperoni slices over the mayo in a slightly overlapping "fish scale" pattern pushing the pepperoni down firmly into the spread of mayonnaise.  Repeat with the other slices of bread.  In a large skillet over medium heat lay one piece of bread down, pepperoni side down. Spread the mustard evenly from crust to crust on the dry side of the bread. Place 3 pieces of Muenster over the mustard side of the bread, covering the whole slice of bread.  Then place Smoked Gouda over the muenster and top with another slice of the bread, pepperoni side up.  Push down gently and evenly on the sandwich to get the Pepperoni crispy.  Cook for 3-5 minutes after the pepperoni begins to sizzle.  Using a turner, gently flip the sandwich over and repeat the process for the other side.

Serve hot with pickled onions and grape tomatoes.  Enjoy!

**Cooks note:
I do not add any additional salt/pepper to this sandwich because the pepperoni already has plenty of both.
