Papa's Pepper Jalapeno Cheddar Cheese Dip

Are you ready for the Superbowl?  Do you need one more crowd pleasing dish to add to your culinary arsenal?  This is it!  This jalapeno cheddar cheese dip is spicy, cheesy, creamy goodness on a chip!  No Superbowl party is complete without it!

3 Jalapenos, seeded and diced
1 Medium onion, finely diced
2T Butter
2T Cornstarch
1t Granulated garlic
1/2t Smoked paprika
2t Papa's Pepper premium spice blend
2C Milk
1lb. Extra sharp cheddar cheese, shredded

1.  Add butter, onions and jalapeno to sauce pan over medium high heat.  Saute' until onions are translucent, about 5 minutes.

2. Add cornstarch and spices and stir for about 3-4 minutes until the cornstarch is cooked.

3. Add milk and stir until it starts to thicken, about 3-4 minutes.  Keep stirring and add cheese a little at a time until it's all melted into the sauce.  Adjust salt/pepper to your liking.

Garnish with fresh diced peppers and serve with your favorite corn chips!

Cooks note:

Purchase a block of cheese and shred it yourself for best result.  Reheat cheese sauce on stove top slowly over medium heat by adding a couple teaspoons of cream to the cheese sauce in a sauce pan.
