Papa's Pepper Crunchy Tacos


Papa's Pepper Crunchy Tacos

There is clearly a reason that Taco Tuesday exists, it's because tacos are delicious! It's doesn't matter what kind of taco, beef, shrimp or even jackfruit, they are all good! My favorite tacos are beef tacos with both a hard taco shell and a soft tortilla. It just adds a great texture element to the taco while at the same time keeps it from falling apart. It's a win/win, and I'm certain you will agree after trying them for yourself!

What you will need:

8 soft taco tortillas, browned
8 hard taco shells, browned in the oven
1 can refried beans
2t Papa's Pepper premium spice blend
1 Lime, juice and zest
16oz. Cheddar cheese, shredded
1 Red onion, thinly sliced
1/2C Red wine vinegar
1/2C Grenadine

2lbs. Ground beef, browned and drained
6T Chili powder
3T Cumin
1T Corn starch
1t Coriander
1t Granulated garlic
1t Black pepper
1T Kosher salt
2t Light brown sugar (trust me!)
2T Worcestershire sauce
2T Tomato paste
1/4C Water

For the beef:
Add browned ground beef to a Dutch oven over medium low heat. Mix all dry ingredients and add to beef along with tomato paste, Worcestershire sauce and water. Simmer beef, stirring frequently for 20 minutes until spices are cooked. If the beef dries out add water 1/4 cup at a time.

For the red onions:

Add red wine vinegar and grenadine to small sauce pan and bring to a boil. Place sliced red onion in a small shallow container. Pour vinegar mixture over onions, cover and let sit for 20 minutes.

For refried beans:
Add canned refried beans to small sauce pan over medium heat with 1/2C of water and the juice from 1/2 a lime and Papa's Pepper. Bring to a simmer while stirring frequently.

Assembly:

Lay a browned soft tortilla flat on a clean cutting board. Smear a thin coat of refried beans on soft tortilla and then sprinkle cheddar cheese generously over the refried bean smear. Place soft tortilla in a taco holder and get a warm hard shell taco from oven and put inside refried bean and cheddar lined soft tortilla. Spoon beef into bottom of hard shell, top with lettuce, avocado, pickled red onions, crema or sour cream and lime zest.

Optional toppings: jalapeno, olives, tomatoes, salsa, cilantro, chives, cotija cheese...... The options are virtually limitless!
