Papa's Pepper Crispy, Buttery Waffles with Hot Honey Sauce

I'll admit it, I'm kinda a waffle snob, in that I like them done just right. Waffles for me need to have a crispy exterior and a soft pillowy interior and that's exactly what I have created here. The addition of a little cornstarch really enhances that crispy exterior on these waffles. The hot honey sauce was inspired by a brilliant chef that I follow on social media and is literally good on anything from waffles to fried chicken! I have learned and gained inspiration from some really great chefs along the way and this sauce is a result of that! I hope you enjoy and look for, and gain, some inspiration along your culinary journey as well!
For the waffles:
2C All purpose flour
1/4C Cornstarch
4t Baking soda
3T Sugar
2t Salt
2C Milk
1T Vinegar
2 Large eggs
1 Stick butter, melted
Canola oil spray
For the Hot Honey sauce:
2C Honey
1T White wine vinegar
1t Papa's Pepper
Optional: 1 Stick butter, melted
1. Combine milk and 1T vinegar, whisk well and let sit for 10 minutes.
2. Combine all dry ingredients and whisk to combine.
3. Add eggs to milk, whisk to incorporate. Then, while whisking, slowly drizzle melted butter into milk.
4. Add milk mixture to dry ingredients and whisk well until mixture is smooth.
5. Spray waffle iron generously with canola oil spray and ladle 1C of waffle batter onto waffle iron and close. Repeat with remaining batter. Serve topped with hot honey sauce. Enjoy!!
For hot honey:
1. Warm honey in small sauce pan.
2. Add vinegar, Papa's Pepper and melted butter if using (it's delicious!).
3. Let the honey sauce cool to room temp as you cook the waffles.
Cooks note:
Pour sauce right before serving so that the waffles stay crispy!
