Alabama White BBQ Sliders with Ginger Cole Slaw

Y'all, I was barbeque deprived growing up. I only knew of two kinds of BBQ, the sweet Kansas City style and the tangy Carolina style. Imagine my surprise when I found out about all the other styles of BBQ! I love them all, I really do, but Alabama white BBQ is at the top of my list. Who would have thought that a mayonnaise based BBQ sauce would work? Trust me, it does! It's also great to dip fries, chips, tater tots and just about anything else you can think of! Well, to prevent anyone else from being BBQ deprived here is my Alabama white BBQ sauce recipe just in time to make sliders for the Superbowl!
3.5 lbs. Ground chicken (my family likes the texture better of ground chicken but feel free to use pulled pork or chicken)
2C Mayonnaise (I like Duke's)
1/3C Horseradish
1t Granulated garlic
1t Onion powder
2t Fresh black pepper
1/2t White pepper
1/4C Apple cider vinegar
2T Yellow mustard
1/4C White sugar
1/2t Smoked paprika
1t Salt
2t Papa's Pepper premium spice blend
12 Toasted slider rolls.
For Cole Slaw:
3/4C Mayonnaise
1T Celery seeds
1/4C sugar
1/4C White wine vinegar
1/2t Salt
1t Fresh finely grated ginger
1/4t Granulated garlic
3 Carrots cut into match sticks
1 Head finely cut purple cabbage
1 Red onion, finely sliced
Pickled jalapenos for garnish
For the protein:
Cook chicken until just cooked through in a dutch oven. This is the one time I try not to brown the chicken because I want that "white barbecue" appearance. While the chicken is cooking mix all other BBQ sauce ingredients together. Once the chicken is cooked pour in white BBQ sauce and combine.
For the Cole Slaw:
Put the vegetables, after finely slicing them, in a large mixing bowl. Combine sauce ingredients and pour over vegetables, do not over sauce. Mix vegetables well with sauce and let sit in fridge for at least 15 minutes.
Assembly:
Spoon a generous portion of the hot white barbecue on bottom of toasted slider bun (it's suppose to be a little messy!) And top with a little "nest" of the slaw and a couple pickled jalapenos.
